Vallarella Oil mill is proposing flavored extra virgin olive oils with: basil, truffle, lemon, chili pepper and wild fennel. Shall we put two of those on our plate?
Here is my dish: Spaghetti with shrimp and “poor man’s chees”.
INGREDIENTS
● 320 g of spaghetti
● 200 g yellow cherry tomatoes
● 300 g peeled shrimps
● Vallarella’s INTENSO oil
● 2 slices of stale bread
● Vallarella’s flavored oil with red pepper
● Garlic
● Salt
● Pepper
● Parsley

In a large heated pan, fry 8 tablespoons of INTENSO oil and finely chopped parsley, add the diced yellow cherry tomatoes and let cook for a few minutes. Pour the spaghetti into boiling salted water and when it is “al dente” transfer it with a little cooking water, into the prepared sauce. Add the peeled shrimp and stir to finish cooking the pasta (3 to 5 minutes).
At the end of the dish serve a generous sprinkling of spicy “poor man’s cheese”.
PREPARATION OF THE POOR MAN’S CHEESE
Mix the stale bread with the garlic and parsley, add the chili oil and salt. Heat a non-stick pan and toast the seasoned bread, turning it often so that it doesn’t burn.
Now crumble it on top of your pasta!
This is it, this seasoned and cooked bread is our “poor man’s cheese”. You can store it in the refrigerator, in a tightly closed container, for three or four days. It can also be excellent for flavoring other preparations.
Many thanks to Vallarella Oil Mill for the pleasant day spent in their company.
Let yourself be inspired!
